Chocolate Cranberry Pie Paleo Recipe

Paleolithic diet (abbreviated paleodiet or paleo diet) also known as the caveman diet, hunter-gatherer diet or the Stone Age diet is a special nutritional plan based on the wild animals in plants presumed to be consumed during the Paleolithic era by various hominid species. However, contemporary Paleo recipes consist mainly of grass-fed pastured raised meats, roots, fruit, vegetables, nuts and fish. Refined sugar, dairy products, salt, processed oils, grains and legumes are excluded for this special dietary regimen. For the novice in Paleo cooking, it can seem that this diet is restrictive and not so tasty and delicious. Chocolate cranberry pie is the proof that there is no reason not to enjoy food while being on this diet.

Topping and Filling Ingredients:

  • 18 oz frozen cranberries (because fresh cranberries are not so easy to be found)
  • 8 oz chocolate (at least 70% cocoa)
  • 1/2 cup coconut milk

Crust Ingredients:

  • 1 egg
  • 2 cups almond flour
  • 2 tbsp coconut oil
  • 1/2 tsp salt

Preparation:

Chocolate cranberry pie is made like usual pie, preparing the crust first. The crust ingredients should be thrown into a larger bowl and mixed well by using a hand-mixer or a blender until crumbly dough is formed. The dough should be transferred into a lightly greased pie baking dish (recommended 9″) and pressed with fingers firmly into the dish, covering it evenly. In the preheated oven to 375 F, the crust should be cooked for about 15 minutes or until it turns to golden brown around the edges and becomes flaky.

Using a small sauce pan medium-high heated, coconut milk should be brought to the simmer and once it is achieved, it should be removed from the heat and stirred in the chocolate until everything is completely melted. The baked crusted should be cooled completely and then poured with the chocolatey filling and placed into the fridge for at least 2 hours.

The oven should be again preheated to 375 F and frozen cranberries should be spread out on a baking sheet and baked for about 8 to 10 minutes. (It is recommended to toss them around once or twice in order not to stick). When they become blister and soft, they should be removed from the oven and placed in the fridge for at least an hour. After enough time being in the fridge (the pie and the berries both), cranberries should be spooned on the top of the pie. The delicious Paleo chocolate cranberry pie is now ready to be served.
