Written By: Ceca - Jan• 07•12

All around the world food is very important part of the celebrations and in many countries hog roast represents the fusion of the old tradition and the modern party. Pig roasting is very popular in Eastern European countries, UK, Philippines, Cuba and in recent years even in the U.S. Foreigners often disagree with this way of preparing meat and also they consider eating hog roast with bare hands little barbaric. But, most of the people appreciate this old-fashioned tradition and could not even imagine some special event without it.

In Puerto Rico, pig roast is a part of the national dish usually eaten on Christmas and New Years Eve. It is prepared in wet seasoning called adobo mojado containing salt, olive oil, wine vinegar, crushed garlic, oregano and pepper. All around Chine, in particular in Southern parts of the country, siu yuk is the term represented a hog roast that is purchased for some special business or family events and even as a part of spiritual ritualistic offering, believed to bring good luck and success. Circular pineapple slice or cherries are often used as the garnish. In the UK hog roasting is considered to be fundamental to many festive events, especially the outdoor ones. British usually eat this delicious dish with the barbeque marinade containing a few spices and Worcestershire sauce. “Lechon” is how the hog roast is called in the Philippines, where it is usually placed on bamboo spit with apple stuck in pig’s mouth and served with sweet spicy gravy.

In many countries that did not have pig roasting tradition, but have many immigrants, there are hog roasting catering companies that help people to preserve their customary traditions. Hog roasting remains a symbol of the festive occasions, such as weddings, birthdays, baptism, anniversaries, graduations and other contemporary events.
