1. Buttermilk Potato Fried Chicken

Ingredients:

  • 1 (3 pounds) chicken, cut into pieces
  • 2 cups of buttermilk
  • 1 tsp. poultry seasoning
  • 1 cup dry potato flakes
  • 2 cups of vegetable oil for frying
  • 1 cup all-purpose flour
  • ½ tsp. salt
  • 1 tsp. black pepper, freshly ground

Method:

Rinse pieces of chicken and pat dry. Take buttermilk in a shallow bowl or dish and add chicken pieces to it. Place in the fridge and let it marinate overnight.

Next day, mix flour, potato flakes, salt, pepper and poultry seasoning in a medium bowl. Dredge the marinated chicken in this mixture so as to get coated from all sides. Set aside for 15 minutes to let the coating stick to it.

Heat oil in a large saucepan or deep-fryer to 175 degrees C (350 degrees F).

  • 1 tsp. salt

Method:

Add all the ingredients to the pan of bread machine and bake on White Bread setting. Before slicing, cool on wire racks.

  • 1 tbsp. lemon juice
  • 1 tsp. vanilla extract

Method:

Preheat oven to 175 degrees C (350 degrees F).

Beat eggs to make them frothy and add flour, sugar and butter. Beat until the mixture becomes smooth. Add buttermilk, lemon juice, vanilla and nutmeg powder. Pour the batter into a pie shell. Bake for 40 to 60 minutes or till the center becomes firm.
