However, although only Hyderabadi biryani is well-known, the state has numerous culinary delicacies that can make any foodie fall in love with it. Also, unlike many other Indian states, Andhra Pradesh is not forbidding to non-vegetarian dishes. In short, in Andhra cuisine you are free to enjoy a great array of flavors. Here are two simple but outstanding Andhra dishes you should try and you are surely going to love them.

1. Garelu

Ingredients:

  • ½ kg Whole black gram
  • Oil to fry
  • 5 green chillies cut into 2” pieces
  • 2 inch piece of ginger, shredded and finely chopped
  • Salt to taste

Method:

Soak black gram in water for around 3 hours and strain the water. Grind the soaked black gram in a blender adding water to make a thick batter. Add salt and pieces of chillies and ginger.

Heat oil in a pan. Take a plastic paper and place a blob of the batter (around the size of a big tomato) on it. Press it with wet hand to make a thick round and make a hole in the middle with finger. Now gently leave the vada into the oil and let it be cooked on a high flame from both the sides. Strain the extra oil and take out the vadas. Your hot, tasty garelu is ready!

2. Chepala Vepudu

Ingredients:

  • 250gm pieces or fillet of fish
  • ¼ to ¾ teaspoon red chilli powder
  • 2-3 pinches of turmeric
  • ¾ teaspoon ginger-garlic paste
  • ¼ to ½ teaspoon garam masala powder (find recipe here)
  • 1 tablespoon lemon juice
  • Salt to taste
  • Oil for frying

Method:

Apply salt to fish and wash well. Drain completely. Mix all the ingredients except oil and apply the mixture to the fish pieces. Keep aside to marinate for around 10 minutes.

Heat oil in a small pan. Stir fry fish pieces in hot oil for 3-4 minutes and then flip. Fry again till the fish is cooked properly. Your simple, yet scrumptious fish fry is ready, enjoy!
