  • 1 packet of Medjool Dates, pitted
  • 1 pound bacon, sliced
  • 4 oz almonds


Preheat the broiler.

Open each date and place an almond inside. Wrap each date with bacon and secure with a toothpick. Broil for 10 minutes or till bacon is evenly cooked and becomes crisp.

Date Pancakes


  • ½ cup of finely chopped Medjool Dates
  • 1 cup of buttermilk
  • 1 egg
  • ¾ cup of flour
  • 2 tablespoons of melted margarine
  • ½ teaspoon salt
  • 1 tablespoon poppy seed
  • 1 teaspoon baking soda


Take dates, egg, margarine and buttermilk in a bowl and mix well. Add the rest of the ingredients and mix lightly with a fork (not too smooth – let some lumps retain).

Heat a skillet and with a ladle (measuring about 3 tablespoons of the batter) spoon the batter on the skillet and spread. Fry till it becomes golden brown. Turn to fry the other side and dust with ground sugar. Enjoy!

Date Energy Bars


  • 400 gm Medjool Dates, pitted
  • 4 tablespoons of cocoa powder
  • 300 gm cashew chopped
  • 1 tablespoon coconut oil
  • 1 tablespoon almond butter
  • 1 tablespoon vanilla essence


Blend all ingredients in a food processor till cashew nuts become very tiny bits. Add 1 tablespoon water and mix again. If the batter is not sticking well, add 1 more tablespoon of water and mix again. Repeat till the batter becomes sticky.

Grease a baking tray and transfer the mixture into it. Press well and refrigerate for at least an hour.

Take out the tray from the refrigerator and make 12 slices or even smaller chunks as per your choice. Wrap each piece in butter paper and store in the fridge. You can now use the snack bars anytime – immediately or when you or someone in the family is leaving for work or a picnic.
