4 Mouthwatering Keto Recipes

A ketogenic diet or keto diet is famous for its unique concept of lowering carbs and increasing fats in one’s diet for weight loss. Its underlying principle is to compel body to use fats as a source of energy, rather than using glucose (that comes from carbohydrates) as the source of energy. Normally, glucose is used as an energy source and therefore fat is stored and weight increases. Ketogenic diet reduces carb intake and so, the stored fat is used by the body and that reduces weight. 1. Bacon + Tomato + Lettuce Sandwich

Ingredients

  • 8 chunks of low-carb bread (such as oopsie bread – recipe given below)
  • 5 ounces of bacon slices
  • Fresh basil finely chopped
  • 1 tomato, sliced
  • 6-8 tbsp homemade mayonnaise
  • 4 lettuce leaves

Method

Fry bacon slices.

Place bread slices with their top surfaces down and first spread a tablespoon or two of the mayonnaise.

Then place fried bacon, tomato, lettuce and basil in layers.

Place another bread slice on top and serve immediately.

2. Chicken Casserole with Pesto, Olives and Feta Cheese

Ingredients

  • 700gm (1 ½ lb) chicken, breast or thighs
  • 400 ml (1 ½ cups) of whipping cream
  • 225gm (1/2 lb) feta cheese dices
  • 100gm (4 ounces) of green or red pesto
  • Salt and pepper
  • 1 garlic clove, chopped
  • 120ml (1/2 cup) of pitted olives, green or black
  • Butter for frying

Method

Preheat oven to 200°C (400° F).

Mix whipping cream and pesto in a bowl.

Cut chicken into pieces and season with pepper and salt. Heat butter in a skillet and fry chicken in it till golden.

In a baking dish, place the fried pieces of chicken along with feta cheese, olives, pesto mixture and garlic.

Bake in oven for 20 to 30 minutes or till the dish takes up a nice color.

While serving, pair it with leafy greens, a little salt and a lot of olive oil.

Oopsie Bread

Ingredients

  • 3 eggs
  • 100gm (3 ½ ounces) of cream cheese
  • A pinch of salt
  • ½ tsp baking powder
  • ½ tbsp of psyllium seed husk (optional)

Method

Take egg whites and yolks in separate bowls.

Whip whites with salt till it becomes so stiff that it should not move even if you turn the bowl over.

Add cream cheese to yolks and mix well. Add baking powder and, if you want, psyllium seed husks.

Fold the egg whites gently into the yolk mix while trying to let air be inside the whites.

Place oopsies in a baking tray and place the tray in the middle of the oven. Bake for around 25 minutes at 300° F (150° C) or till they become golden.

Oopsie can be used in a sandwich or as a bun for a hamburger or hotdog. Various types of seeds also can be added before baking, like sesame, sunflower or poppy seeds. You can also make one big oopsie and make a Swiss roll of it.

4. Bacon and Egg

Ingredients

  • 8 strips of bacon
  • 8 eggs
  • Fresh herbs
  • Cherry tomatoes (optional)

Method

First fry bacon till it becomes crispy and set aside on a plate.

Make cherry tomatoes into halves.

Next fry eggs in the grease left behind after frying bacon. Fry the halved cherry tomatoes too.

Season with pepper and salt.
